A celebrated chef, author and educator, Ann Cooper has long been concerned with the twin problems of infant obesity and malnutrition in her country. In 2009, she set up the Chef Ann Foundation (CAF), which provides schools with the tools to move away from serving highly processed, unhealthy foods, to providing fresh, healthy meals cooked-from-scratch. ‘The Lunch Box’ is a site dedicated to supporting this transition with a range of free resources such as recipes, menu cycles, procurement tools, financial calculators, implementation strategies, marketing materials and more. Among its many different programs, CAF also has a project to donate salad bars to schools (as part of an alliance in support of Michelle Obama’s Let’s Move! initiative); and another to help parents advocate for better food in their own children’s schools.
